Introducción

1. La leche es el primer alimento del

hombre, es su única fuente de nutriente

en el momento del nacimiento.

2. Es el mejor alimento natural porque

contiene cantidades relativamente

importantes de unos 55 nutrientes

esenciales para el hombre.

3. Sin embargo, no es un alimento

completo, ya que todas las leches son

deficitarias en vitamina D y en hierro.

Nivel químico

 La leche se define como un liquido blanco opalescente, de sabor

ligeramente dulce, olor característico y color ligeramente

amarillento, tiene un pH cercado a la neutralidad (6.8) y está

constituido por diversas sustancias.

La leche de vaca, es un rica fuente de calcio, importante para nuestros huesos y dientes, contiene proteínas de alto valor biológico y otros nutrientes que pueden ser benéficos para la salud.
